I Was Featured!! (Almost 2 years ago and didn't tell you about it)
Ya'll! I can't believe it! I was featured on a blog I really love!
OK, so it was about 2 years ago. I had a little blogging absence. I was recently going through my posts and saw that I never posted about this. I started to, but saved it to my drafts and never finished.
So here goes.

Ok, brag over! You could make these for upcoming Memorial Day as well as July 4th. Or just because it's summer! You don't have to have a good reason to make these, make them just because! Have fun with it!

Soft Molasses Cookies With Cream Cheese Filling
So I tried to make some cookies the other day that didn't turn out. But what did turn out is the filling in the cookies. Not just any filling. It was a cream cheese filling. Sweet mother of all that is creamy... It was so good.
So I tossed the cookie recipe and kept the filling. But even though this cream cheese filling is spoon licking good, it needed to go with a cookie.
Enter molasses cookies.
Bingo! Jackpot! So. Good.
Try 'em. Do it!
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1/2 cup (8 TBS) salted butter, slightly softened
- 1/4 cup vegetable shortening
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 tablespoon water
- 1/4 cup molasses
Cream Cheese Filling:
1 - stick butter
1 - 8oz package cream cheese, softened
3-4 cups - confectioner's sugar (depending on desired consistency)
1 - tsp vanilla extract

Roller Skate Cookies
My daughter just turned 7. *Sigh*
Where does the time go?
Yesterday she was like this.
Today... this!
How did that happen?
She wanted to have her birthday at the skating rink. She had so much fun and I enjoyed watching this smile on her face all day.
Here are the cookies I made.
And here are the cupcakes.
And for the goodie bags, I made strawberry and chocolate Muddy Buddies!
She had a wonderful time and I am so happy and thankful to God for granting me 7 beautiful years with my silly, goofy, funny, loving, wonderful and beautiful little girl!

Iced Oatmeal Cookies
I love Mother's Iced Oatmeal Cookies. So when I came across this recipe I was excited to make them.
And they turned out excellent.
Who doesn't love a soft oatmeal cookies with icing? I mean really? Who? I want to know their name and them give them one of these cookies. So. Good.
I found the recipe here. Only thing I did different was add 1tsp of vanilla.

Cowboy Themed Cookie
I recently did some cowboy themed cookies for a baby shower.
The colors were red and blue and they wanted boots and hats.
I had a lot of fun coming up with these.
And I was very thankful to make these for a new, sweet little cowboy!
